RecipeShare: Salmon loaf
Recipe from Sue Zelickson, author, food activist and founder of Women Who Really Cook.
Serves 8 to 9 people

Ingredients
- 1 16 oz can of red salmon , drained and flaked
- 1/2 cup milk
- 2 cups bread crumbs, panko or cracker crumbs
- 2 eggs , beaten
- 1 1/2 T. minced fresh parsley or cilantro
- 2 T. chopped or minced onion
- 1 T. grated lemon peel and juice
- 2 T. butter, melted and cooled
- 1 t. dried dill weed
- 1 t. salt
- freshly ground pepper
Directions
Combine all ingredients , mix thoroughly. Place in greased 9x5x3 loaf pan. Bake at 350 degrees for about 45 minutes to 1 hour. Let cool and slice. Makes 8 to 9 servings.
